Been deep frying turkey...for years Use peanut oil...accept NO substitutes...Around 2 1/2 - 3 minutes per pound of bird...350-375 degrees...NO HIGHER!!! Flash fires are caused that way...NO water in the hot oil!!! S-L-O-W-L-Y lower the bird...NOT indoors!!! Happy Trukey eatin' Day!!!
