It's all good, I first saw a bird done that way in Ga, and have been cooking that way a lot, peanut oil IS the only way to go, high temp oil, I'd like to add some thing I've learned about putting them in and taking them out, (the most 2 crutial steps saftey wise) I most cases you hook the bird and drop him in slow, just watch the bubbles, but once he bonces to the top it can be a real bitch gettin him out, I've found, through many grass fires that by using a made for the pan dipper, you know the alumunum pan with all the holes in it, put your bird in there, slowly place it in the grease, once she bobs, put your gloves on and slowly take it out, I'm not trying to out do any one, but I've been there with 2 barb-B-Q forks, just hoping one doesn't slip out or tear out and then sploosh, did I mention lawn fires?
