Yes water quality can effect the dough but I would think with you up there your water should be really good. I got a store by the name of Trader Joe's down the street and they have several kinds of fresh pizza dough you can buy. Whole wheat, herb, and plain. I've tried them all and like the whole wheat the best but they still don't match up to a good pizza parlor. I'm still looking for one around here that uses real wood or coal. I was at a place on Broad St in Phila and they had a coal fired oven that turned out some of the best ZA I ever had. For the life of me I can't remember the name of it. Of course that was about 18 years ago..
