For downstream speeds of 5meg our system uses no more than 1000 subs per 256qam and we try to stay under 200subs per uBr upstream port.
I also read some info on DOCSIS 3.0, it will be using a method called channel bonding for speeds over 10meg to compete with FTTH. This method uses multiple 256qams to send the data downstream rather than just a single qam.
