I usually use regular Kingsford. Lasts a long enough to get 3 or 4 grills of meat before you have to add more. I like to put wet hickory or mesquiet chips on the coals from time to time. I use to be a Dale's marinade fan for steaks, but my wife makes one with soy sauce, brown sugar, fresh garlic and ginger that puts anything else I've ever used to shame.

Now for pork I like a dry rub and then about 5 to 10 mins before it comes off the grill dip it into BBQ sauce and cut the dampers down to almost closed. Sauce almost bakes into the meat and doesn't burn because of no air flow over the coals.

Potatoes, pop them in the microwave on high for 2 - 3 mins. Then cut them into 6 - 10 pieces depending on there size. Put the pieces on skewers and baste them with some pesto and pop them on the grill for about 5 to 10 mins until they brown a bit on all sides. If you don't like pesto you can use olive oil, rosemary, salt an pepper, or olive oil and garlic.

Grilled pineapples. pears, plantains, mango's are tasty too.
