Brining makes all the difference! 2 gal water, 1 cup kosher salt, 1 cup brown sugar and half bottle of worchestershire! Soak it for for 12 hours. Before the roast up, render a pound of cheap fatty bacon and baste the skin with the pigfat 3 or 4 times as it cooks!!
