It sounds to me like you have you ducks in a row, paperwork is the game in Satellite Installs , If you are literate, which i can tell you are, and you have common sense you can make money in satellite installs but i would consider Directv before Dish for simplicity reasons. You are going to still be required to do the 6 day a week gig but some things you can't change, although after you have established yourself as a reliable tech you can use that to try and see what you can get away with. You won't have to do as many jobs to make your money but travel between jobs will increase considerably. the thing i hated the most was the scheduleing, 4 jobs in a day but all scheduled AFTER 12:00pm. Some Companies will drop ship equipment to the customer and let you schedule with the customer, there are so many variables it's hard to go into them all, you may also want to check with the Sat. Installers in here also because i am hearing that they are starting to push subs in-house and hourly also. This is a truly trying time for installers, I feel for you guys, i really do. Anyhow good luck in whatever you decide.
