Does this customer have a phone system, I do beleive you know the difference between just a cordless phone and a phone system. You said you did the structured wiring for this home, right?
Well if you did, did you do it in the prewire phase or was it a retro ? Is it possible that maybe after you ran your structure wire that maybe the electricians ran thier wires over your wiring which could be part of the problem. I had that happen before. Another thing you can try is check the cordless phone in question it may have an addressable frequency. If it does reassign the address. Another thing is does this happen at all cordless phones. or just the one in the kitchen ? Try another cordless in the house and see if it does the same noise it could just be a faulty phone.
