Just fried up 5 for the tailgate party at my nephew's fb game Saturday. We use a garlic & herb injection, then put a mild rub on the outside. Fry 3 - 3.5 min per pound @325-350 deg. Couple points: like some here have already said--lower slowly and think about using a pair of rubber gloves to hold the hook. The oil comes bubbling out the neck cavity pretty good. If you inject, don't go too deep--about an inch below the skin. Finally...don't forget to take the oven "popper" out...
