Ignore the clause and do what you want.
They would have to sue you, show that the clause is superior to right to work laws and prove a loss or damages. Expensive, a huge mess, and nearly impossible to prove up. They won't bother. Its nothing more than a scare tactic.
In my experience as a contractor, the Prime will have a reciprical no hire clause in their contract with the Cable company that would prevent the cable company from hiring you directly for a period of time. That would be easy for the Prime to enforce just by calling the Cable company. This agreement the Prime has with the Cable company should have no effect if you sub for another Prime. Whether you quit or get fired is immaterial.
