Its when you put the meat in boiling water for a few usually with salt onions and celery to tenderize it and remove some of the fat. Places like Tony Roma's and Chilies do it so they can cook their ribs faster. But a true rib/BBQ place will cook them long and slow with indirect heat of some kind. Damn now I'm hungry for ribs. Well I'm going to the farmers market tomorrow early and get 10 or 12 pounds of ribs to cook. Got some Hickory chips to put in the coals give them some good flavor.
