The trick I find is as soon as you get him on board put a ice pick in his head and put his head in a bucket to drain. Makes the meat firmer when you go to cut it. Nice sharp knife and FRESH wasabi root, night and day difference between that stuff in a tube. Oh, by the way DO NOT throw the head away; thats the best damn part.
