I had a step father that grew up poor in Sulphur LA. I'd say he was a true "coon ass" (that's not like saying the N word is it?) He made gumbo that I love as a kid growing up. Is it considered gumbo without using seafood food? We never had seafood but he would make it with chicken and it was fantastic. He also made with other critters like dove and squirrel. I didn't care too much for that stuff in the gumbo. The good thing is he taught my mother how to make it and when I go home she always makes a pot for me only now we can afford the seafood instead of just chicken or squirrel. GOOD STUFF...making me want some now LOL
