Forget boiled peanuts... winter is upon us!
I bought two of these at Publix... Buy one get one free... you know the drill. Put 5 large cooked chicken breasts in a large pot with the water and spices from the package. Doubled the recipe to cut down on the sodium content. Added a large chopped sweet onion, a can of northern beans, two cans of low sodium black beans, 1 can of Rotel habaneros and diced tomatoes, one can of no sodium sweet corn. Cut up two large Hungarian wax peppers (could not find any sweet banana peppers) and two large fresh jalapenos. The kit has dried jalapenos and dried cayenne peppers in it but too skimpy and whimpy.... turned out real well.... in retrospect I would have added a can of rotel green chilis with diced tomatoes. I usually use soaked dried beans and all fresh vegetables and peppers. I did not grow a garden this year.
