Here is the approach.....5 given back...the bellhop keeps 2. 2 plus 25 is 27......1 to each of the men is 3. 3 plus 27 is 30....OR
 he gave back 3 to each....3 plus 25 is 28 and he kept 2....2 plus 28 is 30..........
You see the men already paid the 27...25 plus the 2 that the bellhop took...that makes 27....and he gave them back 3 which makes 30...got that?  all done with my wine. lol
