Curry Pork With Apples


Well it's fall again and for me that means time to get out the crock pot and start making beans and ham hocks, chili, stews, pork and sauerkraut and many other things that fill that vast void in my belly after a long day a field.I was looking for something new.
It's not crock pot food but it will warm you on a cold day. Takes about 45 mins to make.I love pork and apples and I had 3 plates and took the rest for lunch the next day. I know a lot of us dawgs like to cook and if your on the road eating out gets old and expensive fast. You can make this whole dish with a hot plate and 2 pans so it's a good road dish if short on space. INGREDIENTS: 1 pound lean pork, diced: 1 tablespoon vegetable oil: 2 apples, cored, chopped (peeled optional): 1/2 cup chopped onion: 2 tablespoons flour: 1 to 2 teaspoons curry powder, to taste: 1/4 teaspoon salt: 1/4 teaspoon ground ginger: 1/4 teaspoon garlic powder: 2 cup chicken broth caned works fine:1 tablespoon lemon juice: 1/4 to 1/2 cup golden raisins, (optional) ·hot cooked rice:: PREPARATION: In a large skillet, or dutch oven heat oil over medium heat. Brown the diced pork. Add apples and chopped onions; brown lightly. Add 2 tablespoons flour and curry powder; stir to blend. Stir in remaining ingredients. Cover and simmer for 35 to 45 minutes. Serve with hot cooked rice. Serves 2 to 4
