Every state is different. Go the court house for the county where you did most of the work. Start with Small Claims court. Just ask for direction at the desk. They can't give legal advice but they deal with this stuff all the time.
Be guided by the idea that the use of force is a limited too;. The threat of the use of force is more powerful. Gradually squeez....call the installation company and ask them how they feel about you just collecting your money from the addresses where you did the installations. See how that gets them.
