I do know of several techs who have made the transition from cable or satellite to home theater, which is much more lucrative. It might not be a bad idea to offer a few more services other than wall fishes and rewiring, which should be part of a slew of services. The techs I know do surround sound, plasma tv mounting, integration of any A/V equipment, and any satellite and/or cable wiring (additional outlet) needs.
Here are some ideas on the pricing for the above mentioned services.
Surround sound in a standard room with attic or crawl space: 250-300.
Plasma TV Mount: 250-350 depending on size and type.
A/V components 75-100 just to hook them up.
Wall fishes: 50-75.
A/O: 50-75.
