My understanding is that stingrays are responsible for only 3 deaths in the last century or so, with the last one occurring in 1920.
I figured it wouldn't be a snake or gator that would get him. He likely has medical personnel ready with antivenom for the species he's filming that day. If he gets caught up in a gator's mouth, shooting it or having wranglers of some sort could be of assistance. I had always thought that if he were mortally wounded by an animal, it would be one that, while considered possibly dangerous, wasn't likely to attack a human. I'm sure Steve's level of cautiousness is exceptionally high when dealing with animals such as snakes and gators, but more mild-tempered animals probably get less caution.
