Yes and no.

If you form your own union from scratch, the group seeking to organize has to lay out the money for attorney fees, salary loss for the employees for bargaining, printing, postage, and if the employees are smart, they should also hire an experienced person to bargain a contract. Too all of which can cost a small fortune; but if the unit is several thousand people or more, you might be able to afford it and you will also feel comfortable that the employees of the shop will have 100% control.

If you go with an existing union, (I can only speak for my union) they have the resources and it doesn't cost the employees a cent to organize.

I guess you have to weight the pro's and con's. Either way collective bargaining is much better then remaining non-union. No matter how good or bad your contract is; at least you know what your entitled to and both sides have to honor the contract.
