Hard part is the only way you'll get them to say yes is to undercut what the work is worth. Walk-out the job, prewire, go back for connections/verify, then wait for your money. Not worth it.
Don't just go for cat5 and cable. Juicy money in Smart Home technology. Wire for video and communications. Then sell them a $6000 dollar plasma and make the easy money.

Money for a service contract
Money for alarm monitoring (wholesale monitoring is about 5 bucks a month!)
