If you are upgrading you still use the same bird that you had originally used. If your old dish was pointed at 101, the new one will be pointed at 101. Azimuth and polarization will be the same. You then have to use the specific offsets that come with the kit to recieve the other programming you're looking for.
Where you reside makes the kit choices different.
